Caramel Popcorn

Caramel Popcorn

I had been wanting to make a new snack for my kids all week but really had no time till today. Caramel Popcorn is something that is easy enough to make, no fancy ingredients or equipment needed. I vow every time I make it that this will be my Christmas present to my friends but the holidays get so hectic that I end up giving out wine. Maybe with the recession, this might be the year.

Recipe:

  • 12 cups unsalted microwave popcorn (about 1 bag) – I pop my own in a bit of oil ( about 1/3 cup of kernels)
  • 1 cup brown sugar
  • 8 tablespoons (1 stick) unsalted butter
  • 1/4 light corn syrup
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  1. Pre-heat the oven to 225º.
  2. Place the popcorn in a bowl with enough room to mix the popcorn once the syrup is poured over.
  3. In a heavy bottom sauce pan over medium heat, combine the brown sugar, butter, corn syrup and salt. Bring to a boil and stir in baking soda.
  4. Allow to cook at a steady low boil till the mixture is a deep amber color – approximately 4 minutes.
  5. Pour the syrup over the popcorn. Working quickly, stir to evenly coat the popcorn.
  6. Transfer onto  a parchmet-lined baking sheet and place in the oven for one hour. Remove and allow to cool completely.
  7. This can be stored in an airtignt container for up to 10 days.
