I had been wanting to make a new snack for my kids all week but really had no time till today. Caramel Popcorn is something that is easy enough to make, no fancy ingredients or equipment needed. I vow every time I make it that this will be my Christmas present to my friends but the holidays get so hectic that I end up giving out wine. Maybe with the recession, this might be the year.
Recipe:
- 12 cups unsalted microwave popcorn (about 1 bag) – I pop my own in a bit of oil ( about 1/3 cup of kernels)
- 1 cup brown sugar
- 8 tablespoons (1 stick) unsalted butter
- 1/4 light corn syrup
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- Pre-heat the oven to 225º.
- Place the popcorn in a bowl with enough room to mix the popcorn once the syrup is poured over.
- In a heavy bottom sauce pan over medium heat, combine the brown sugar, butter, corn syrup and salt. Bring to a boil and stir in baking soda.
- Allow to cook at a steady low boil till the mixture is a deep amber color – approximately 4 minutes.
- Pour the syrup over the popcorn. Working quickly, stir to evenly coat the popcorn.
- Transfer onto a parchmet-lined baking sheet and place in the oven for one hour. Remove and allow to cool completely.
- This can be stored in an airtignt container for up to 10 days.
